Why Pardon Loves It

Third-generation winemaker Nikos Douloufakis leverages modern techniques while remaining focused on tradition. For this natural orange wine, he decided to vinify the wine in clay amphora—the same way wine was made in Crete four millennia ago—then age the wine for four months in stainless steel tanks.

The unfiltered result is big, tannic, and complex. A wine fresh and crisp enough to drink outside on a warm day, or open for a cosy night at home. A must-try for orange and natural wine lovers, and also for aficionados of big reds looking for something off the beaten path.

Simultaneously old and new, this Muscat is a reminder of both Nikos’s individual talent and passion, and the incredible wines coming out of Greece that are still too often overlooked.

Tasting & Pairing

Tasting notes:

Notes of marmalade, cashew nuts, almonds, and grapefruit make for a thought-provoking wine for the appreciative palate and mind. Because of its high levels of tannins, steak and lamb (and burgers) are great companions here, while its freshness and balance mean it’s also a wonderful partner to salmon and tuna.
