Why Pardon Loves It

Bott Frigyes is a winemaker focused on honouring the traditions of the land, gastronomy, and culture around his vineyards. While the winery is on the Slovakian side of the border with Hungary, the region is traditionally Hungarian, and as a result Frigyes prioritises working with traditional local Hungarian grapes, including Kékfrankos (better-known globally as Blaufrankisch).

Located in the breathtaking triangle formed by the Garam River, the Danube and the southern side of the hills of Muzsla, the vineyard used to belong to a local cathedral and today produces natural, biodynamic wines that emphasise the volcanic soils under the vines.

The result is a clean, mineral wine with power and that provides a window into the terroir and traditions of a long-standing winery and winemaking region that gets far less attention than it deserves.

Tasting & Pairing

Tasting notes:

Pardon says simply: decant this and it will rock your palate. Look for cherries, blackcurrants, and herbs on the nose, with the spice, fruit, and moderate tannins that a true Kékfrankos should give you. Pair it with grilled meats, strong cheeses, or dark chocolate.
