Why Barbora Loves It

The Pinard family has a rich winemaking history dating back to the 17th century. Today, the estate in the village of Bué is managed by the 15th generation, Florent and Clément Pinard. Certified biodynamic since 2017, the estate boasts several top locations in the appellation, including Petit and Grand Chemarin, Le Château, and Le Chêne Marchand. 

This cuvee comes from vineyards consisting of simply tremendous old vines planted between 1982 and 1987 on Caillottes (limestone) soils. 

Indeed, the 'Flores' Sancerre has been a staple in prestigious 3-star restaurants in France for over 50 years. This is a wine that offers remarkable weight and depth, thanks to its maturation on the lees for 7 to 9 months in wooden vats. Unfined and unfiltered, it captures the essence of its terroir with a perfect balance of minerality and richness.

On the nose you'll find plenty of citrus and grapefruit, followed by a dry, intense, perfectly balanced palate. Pair it with cod, scallops, or most other seafoods, or a nice goat cheese salad.
