Chilled Shrimp and Avocado Salad

Ingredients:
- 300g cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
-1 small cucumber, diced
- 1/2 red onion, finely chopped
- 1 small red chilli pepper, seeded and finely chopped (optional)
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh cilantro leaves for garnish

Instructions:
1. In a large mixing bowl, combine the cooked shrimp, diced avocados, diced cucumber, chopped red onion, and chopped chilli pepper (if using).
2. In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and pepper to make the dressing.
3. Pour the dressing over the shrimp and avocado mixture. Gently toss to coat everything evenly.
4. Taste and adjust the seasoning if needed. You can add more lime juice, salt, or pepper according to your preference.
5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavours to meld together and chill.
6. Once chilled, give the salad a gentle toss again before serving. Garnish with fresh cilantro leaves.
