TEST: Momenti’s Favourite Pairing: Cod Fish with Onions and Raisins Over Chickpea Cream

This recipe combines the flaky texture of the cod with the sweetness of caramelised onions and raisins and the creamy, savoury flavour of the chickpea cream for a delicious, balanced dish.

Ingredients

For the Cod

  • 4 cod fillets
  • 2 large onions, thinly sliced
  • 75g raisins
  • 3 tbsp olive oil
  • Salt and pepper, to season
  • 120ml dry white wine
  • Fresh parsley, finely chopped (to garnish)

For the Chickpea Cream

  • 1 tin chickpeas (400g / drained weight approx. 240g), rinsed
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 120ml chicken or vegetable stock
  • Salt and pepper, to season
  • Juice of ½ lemon

Method

  1. Prepare the chickpea cream:
    Warm the olive oil in a medium saucepan over a medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the chickpeas and cook for around 5 minutes, stirring frequently.
  3. Pour in the stock and leave to simmer gently for around 10 minutes, until the chickpeas are very soft and have absorbed some of the liquid.
  4. Transfer everything to a blender or food processor. Add the lemon juice and blend until smooth. If it feels too thick, loosen with a splash more stock or water. Season generously with salt and pepper. Set aside and keep warm.
  5. Cook the cod:
    Heat the olive oil in a large frying pan over a medium heat. Add the sliced onions and cook for around 10 minutes until soft, sweet and lightly caramelised.
  6. Add the raisins, stir well, and cook for a further 2–3 minutes.
  7. Push the onions and raisins to the edges of the pan and place the cod fillets in the centre. Season with salt and pepper, then sear for 2–3 minutes on each side.
  8. Pour over the white wine. Reduce the heat to low, cover the pan and cook gently for 10–15 minutes, or until the cod flakes easily.
  9. To serve:
    Spoon a generous layer of warm chickpea cream onto each plate. Place a cod fillet on top and finish with the onion and raisin mixture. Scatter with chopped parsley.
  10. Enjoy with a side of lightly sautéed greens or a crisp green salad.
