Ingredients:
For the Cod:
· 4 cod fillets
· 2 large onions, thinly sliced
· 1/2 cup raisins
· 3 tablespoons olive oil
· Salt and pepper to taste
· 1/2 cup white wine
· Fresh parsley, chopped (for garnish)
For the Chickpea Cream:
· 1 can (15.5 ounces) chickpeas, · drained and rinsed
· 3 tablespoons olive oil
· 2 garlic cloves, minced
· 1/2 cup chicken or vegetable broth
· Salt and pepper to taste
· Juice of 1/2 lemon

Instructions:
1. Start by preparing the chickpea cream. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
2. Add the chickpeas to the pan and cook for about 5 minutes, stirring frequently.
3. Pour in the broth and let it simmer for about 10 minutes until the chickpeas are very soft and have absorbed some of the liquid.
4. Transfer the chickpea mixture to a blender or food processor. Add the lemon juice and blend until smooth. If the mixture is too thick, add more broth or water. Season with salt and pepper to taste. Set aside and keep warm.
5. For the cod, heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook until they're soft and slightly caramelised, about 10 minutes.
6. Add the raisins to the skillet, stir well, and continue to cook for another 2-3 minutes.
7. Push the onions and raisins to the sides of the skillet and add the cod fillets. Season them with salt and pepper. Sear each side of the fillets for about 2-3 minutes.
8. Pour the white wine over the cod, onions, and raisins. Reduce the heat to low, cover the skillet, and let it simmer for about 10-15 minutes, or until the cod is cooked through and flakes easily with a fork.
9. To serve, spoon some of the warm chickpea cream onto each plate. Place a cod fillet on top and spoon some of the onion and raisin mixture over the fish. Garnish with fresh parsley.
10. Enjoy this savoury and slightly sweet dish with a side of sautéed greens or a fresh salad.
